In honor of Celebrate Our People week Kelli Fenwick, Hyatt Regency Chicago’s Assistant Pastry Sous Chef demonstrates a traditional Saipan Flan dessert recipe.

Serving size: 1 cup

Ingredients:
LargeEggs: 6

Evaporated Milk: 1 cup
Milk: 2 cup
Sugar: 1 1/2 cup
Vanilla: 4 tsp.
Salt: 1/4 tsp.
Water: 1 cup

Caramelize Mixture Directions:
1. Dissolve 1 cup of sugar in cooking pot over medium heat, stirring constantly.
2. After sugar has thoroughly dissolve, mix in 1/4 cup of water. Reduce heat and stir well for 1 minute.
3. Pour rapidly caramel mixture onto bottom of baking/serving dish.

Leche Flan Directions:
1. Beat lightly the eggs, 1/2 cup sugar and salt in a mixing bowl.
2. Add milk and vanilla.
3. Pour content into caramel-covered baking dish.
4. Place the entire baking dish into a larger pan filled with water, and bake at 350 degrees for 35 minutes. (To test for doneness, insert toothpick into the middle of the leche flan; it should come out clean.)
5. Cool to set before serving.

Makes about one 8×8 inch baking pan.
